Christmas High-fibre muffins…

A note for those new to my blog; these muffins were devised to counter the constipating effect of opioid analgesics, which they do very well. This version also tastes bloody good anyway (as did its cheese and onion predecessor last time).

Christmas High-fibre muffin recipe.

100g wholemeal s-r flour

50g ground linseeds (if not available add another 50g of oat bran)

25g oat bran

100g molasses sugar

200g mincemeat – Robertson’s is fine

3 tsp mixed spice

2 tsp vanilla extract

2 tsp baking soda

2 tsp baking powder

1 egg

100g butter

½ tsp salt

Just enough milk to mix to a soft dropping consistency

Top with Demerara sugar

Cream the butter, sugar and egg, add everything else, mix well, but take care not to over-mix, as I did, if using a mixer.

Fill the muffin cases well – the fibre content means they won’t rise a hell of a lot

Bake at 180C for 30 minutes (fan oven), longer in conventional oven, but check at 30 minutes, and adjust timing accordingly..

Makes six with a bit left over. And they taste amazing, the tops crisp and toffee-ish.
